Prepare Chickpea Lentil Soup Mix With 3 Unique Recipes

Recipe 1: Spicy Chickpea Lentil Curry

Instructions:

  1. Heat 1 tbsp coconut oil in a large pot over medium heat. Add 1 chopped onion and sauté until golden brown.

  2. Stir in 2 tsp curry powder, 1 tsp turmeric, and 1 tsp chilli powder. Cook for 1–2 minutes until fragrant.

  3. Add 1 cup diced tomatoes to the pot and stir well.

  4. Stir in the Chickpea & Lentil Soup Mix with 4 cups of coconut milk. Bring everything to a boil and then reduce heat to a simmer. Let it cook for 25–30 minutes until the flavours mix and the lentils are tender.

  5. Garnish with fresh cilantro and serve with rice or naan bread.

Recipe 2: Vegetable-Loaded Chickpea Lentil Soup

Instructions:

  1. Heat 2 tbsp olive oil in a large pot over medium heat. Add 2 chopped carrots, 2 chopped celery stalks, and 1 cup chopped green beans. Sauté for about 5 minutes until they begin to soften.

  2. Stir in 1 chopped zucchini and 1 tsp Italian seasoning. Cook for another 2–3 minutes.

  3. Add the Chickpea Lentil Soup Mix along with 4 cups of chicken or vegetable broth. Boil everything.

  4. Reduce heat to low and let it simmer for 25–30 minutes or until the lentils and vegetables are tender.

  5. Stir in 1 tbsp apple cider vinegar right before serving to balance the flavours.

  6. Serve hot with fresh bread or crackers.
