Crepes Anyone!!!

When we were on the way home from Made in Montana last year, we stopped in Bozeman at a little crepe shop, and the girls and I have been obsessed with crepes ever since!! We got ourselves a crepe maker (a glorified round grill), and we like to make large batches of crepes to have on hand for breakfast, a fast, easy snack, and sometimes a fast dinner!! They are so versatile, and everyone can make one how they like it!! Maysen loves to have peanut butter and bananas. Both girls love it when I get a chickpea chocolate spread, and they will just eat them with that. We will make cream cheese spreads, or my favorite is to make up a scrambler of eggs, meat, and veggies and wrap it up in the crepe.  However you like them, they are fun, fast, and way easier than you think!! So here is a recipe to get you started with our Chickpea flour.

Now, this recipe does make a lot, so if you don't need a bunch or don't want to have extras for your fridge, I suggest cutting the recipe in half

2 cups of Chickpea flour

1/2  tsp of Baking Powder

1/2 tsp of Salt

2 cups Milk

2 Tablespoons Melted Butter

1/2 tsp of Vanilla

1/2 tsp Almond extract 

2 Eggs

Mix well and use a 1/2 cup for a regular crepe maker or a hot flat pan.  I also used my Krumkake maker to make smaller ones, which take 1/4 cup per side.  These smaller ones are great for making egg sandwiches!! 

Get some Chickpea flour and start an obsession with these crepes!!!
